Great Conversations serves up top chef and ‘Munchmobile’ writer

Inspired to become a top chef, Heyer’s path included Mistral’s (VT) the Bluffs (NJ), and then the Culinary Institute of America (CIA). While at the CIA, he fulfilled an externship at The Frog and the Peach (New Brunswick) and worked at Restaurant Daniel (NYC) under renowned Chef Daniel Boulud. Following graduation, he distinguished himself at Fromagerie (Rumson, NJ), becoming Executive Chef within a single year and hosting two James Beard dinners (for Julia Child and Jacques Pepin). During his tenure, Fromagerie won “America’s Top Tables” distinction (Gourmet), “The Best of the Best” and “Best French” (New Jersey Monthly’s reader’s choice awards), AAA’s Four Diamond award, as well as Mobil’s Four Star award. Pursuing the finest kitchens and most diverse ventures, Heyer then worked under such outstanding chefs as Jean-Georges Vongerichten (at Jean-Georges, NYC), at Vong, and with Tom Colicchio at Gramercy Tavern, to name a few. Heyer was the opening chef of Restaurant Nicholas, (Middletown), garnering four star reviews from the NY Times, The Star-Ledger, New Jersey Monthly, The Asbury Park Press and the Zagat Survey. For three years, he once again achieved “Best of the Best” status from New Jersey Monthly’s readers, in addition to “Best New American” cuisine.

The Trenton native is the author of ten books, including Jersey Diners, The Great American Road Trip: US 1, Maine to Florida, The Food Lovers’ Guide to New Jersey, Roadside Florida, The Jersey Shore Uncovered: A Revealing Season on the Beach and Pizza City: The Ultimate Guide to New York’s Favorite Food. He oversees and writes The Star-Ledger’s “Munchmobile” series, roaming the Garden State during the summer in search of the best Jersey eats (and inviting residents along for the ride). He also is the pen – and mouth – behind NJ Advance Media’s immensely popular “NJ’s Best” series, which has included missions to find the state’s best bakeries, best tacos, best bars and best burgers. New Jersey Monthly magazine named him “One of 40 New Jerseyans We Love.”
